Sabudana Khichdi (For Fasting)
Sabudana Khichdi is most popular recipe among the others that you can make on fasting. Sabudana khichdi is an easy snack. It is a testy recipe for fasting days like ekadasi, mahasivratri, navratri etc.
One great thing is that children also like it very much. On Fasting there are various limitations on ingredients which you can use as per your Vrat (Fasting). It is an easy snack and is a good recipe to be made during fasting days. It requires little experience to get the perfect nonsticky texture in the sabudana pearls.
The key to this simple dish is to thoroughly soak the sabudana, or medium-sized tapioca pearls, until you can easily smash one between your thumb and forefinger. Sabudana khichdi, which loosely translates to “tapioca mixture,” is a delightfully chewy Maharashtrian pilaf studded with the crunch of toasted peanuts, creamy bits of potato, and the occasional cumin seed. A hit of sweetness is balanced with salt, lemon and the alternating flames of ginger and green chilli, and then everything is showered with a generous amount of chopped cilantro. The result is seductive in both texture and flavour.
Sabudana khichdi is a dish which is simple to cook and delicious to eat. In many larger cities in Western regions, Sabudana Khichdi is popular as a street food. Sabudana Khichdi is a no onion no garlic dish. It is frequently made when observing a “fast” during Hindu festivals like Maha Shivaratri, Janamashtmi, Ekadashi, Navratri etc. If making for Navratri, you can replace regular Salt with Sendha Namak.
