Ingredients
  

  • 200 gm Okra/lady finger/bhindi
  • 3 tbsp oil
  • ½ tsp cumin seeds
  • 1 tsp ginger garlic paste
  • 1 medium onion
  • 2 medium tomatoes
  • 1 tsp red chilli powder
  • ¼ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • 2 tbsp yogurt
  • 1 bay leaf
  • ½ inch cinnamon
  • 1 clove
  • 1 cardamom
  • 1 tbsp gram flour (besan)
  • salt to taste
  • 1 – 2 tbsp chopped cilantro/coriander leaves

Instructions
 

  • Wash and pat dry the lady's finger with a kitchen napkin. Cut off the crown and tip, cut the okra into 1 to 2 inch pieces.
  • Heat oil shallow fry the okra for 5 minutes on low flame.
  • Heat oil on medium heat in a pan, add bay leaf, cinnamon, clove, cardamom and add cumin seeds. Once the cumin seeds splutter, add finely chopped onions and ginger garlic paste and sauté it well.
  • Now add red chilli powder, turmeric powder, garam masala, and coriander powder. Sauté over low flame for another minute.
  • Add chopped tomatoes, besan and salt to taste and sauté until it starts leaving oil from the sides of the pan.
  • Turn the flame low, add yogurt. Mix it well, and stir continuously until oil begins to separate from the sides of the masala.
  • Add about 1/2 cup water, mix it well, let the gravy come to a boil.
  • Add the fried okra, mix well and let it simmer for another 5 to 7 minutes. Add finely chopped cilantro leaves mix it well. Serve hot with jeera rice/ pilaf/ tandoori roti/naan or any other flatbread.
